Just in case you need a little pick-me-up ( i.e. chocolate), I have a simple favorite to share with you.
The Microwave Mug Brownie
- 4 Tbsp Flour
- 4 Tbsp Sugar
- 2 Tbsp Cocoa Powder
- 2 Tbsp Vegetable/Canola Oil
- 3 Tbsp left-over coffee (decaf in my case) (or you could use water)
- Dash of Salt
- (optional) a handful of chocolate chips and/or nuts
Add dry ingredients to your mug and mix together. Add wet ingredients. Microwave in your mug for one minute and then in 10 second increments until it looks done. Mine usually takes about 1 min. and 30 sec. Let it cool; then enjoy! (I divide this recipe if I’m making it for the kids.)
Let me tell you what a delight this recipe has been, particularly since my chocolate intake is limited to those foods that do not include milk (the little man has had some dairy issues that I’m trying to help him out with).
